Lambic

Lambic Beer has been brewed in Belgium since the 1400's. Today, many of the best Lambics are actually mixes of year-old batches blended with two or three old batches which have been aging in barrels. A lambic is typically a one-to-two part blend of wheat and barley. After malting, the grains are cooked and then exposed to the air collecting wild yeasts from the brewery. The beer is fermented for an extended period of time, then put in barrels to mature for as many as three years. Lambic beers tend to be dry, on the acidic side and with somewhat of a bitter note. It's a complex, interesting flavor that "catches on" as you sip it.
